parboiled rice or any rice of your choice
1/4 tsp ginger
1 clove garlic
1/4 chopped onion
1/4 chopped tomato
green chillies
asparagus/cauliflower/noodles/beans (frozen)
coriander for garnish and salt to taste
ground tamarind powder
Sweet and sour sauce
Soy Sauce
Method
- Cook 1/2 cup rice in a microwave for 15 minutes until it is done (add a little salt to the rice)
- In a pan heat a little olive oil
- Add ginger, garlic red pepper flakes
- Add green chillies, onion, tomato all at once and don't let it overcook
- Add your choice of vegetables and season it with a little salt
- Add sweet and sour sauce and soy sauce
- Let it simmer for 2 minutes till veggies are cooked then add the rice
- Add ground tamarind
- Serve it hot
- It can be eaten plain or with any sort of meat or vegetables
Note: I added very less oil enough to saute the veggies. You don't need to add a lot of oil to make this recipe. The tamarind added a nice zing to the rice surprisingly and went along well with the sauces.
